Reuben Casserole

  • 8 ounces cooked corned beef or deli corned beef, finely chopped
  • 1 14.4-ounce can sauerkraut, drained and chopped
  • 2 cups shredded Swiss cheese
  • 1½ cups baking mix (Bisquick)
  • 1½ cups milk
  • 3 large eggs, beaten
  • 1 tablespoon chopped fresh parsley

Preheat oven to 350° F.

Mix the corned beef, sauerkraut, and cheese and spread in a 13 x 9 x 2-inch baking dish.

In a large bowl, mix the Bisquick, milk, eggs, and parsley, and pour evenly over the top.

Bake for 30 to 35 minutes.
