Banana Bread

  • ½ cup butter, room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mashed very ripe banana
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts

Preheat oven to 350° F.

Cream butter, sugar, and eggs together. Sift together dry ingredients and add to creamed mixture; blend well. Add the bananas, sour cream, and vanilla; stir well. Stir in nuts and pour batter into a well buttered loaf pan (9 x 5 x 3 inches) or several small pans.

Bake 1 hour. Turn over on rack to cool.

Makes 16 ½-inch thick slices.
