Banana Salsa

 

8 Servings


  • 6 medium bananas (ripe but firm), quartered, then cut into dice
  • 1 fresh jalapeno pepper, stem and seeds removed, then minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh peppermint
  • 1 medium green bell pepper, cored, seeded, and diced
  • 1 medium red bell pepper, cored, seeded, and diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Combine all ingredients and let sit for two to four hours before serving.
