Hot Milk Cake

  • 1 stick butter
  • 1 cup milk
  • 5 large eggs
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

Preheat oven to 350° F.

In a small saucepan, heat butter and milk, just until butter has completely melted. Remove from heat and cover to keep warm.

Beat eggs for about 5 minutes, then beat in sugar, and then vanilla. Combine flour and baking powder, and then gradually add to batter and beat until smooth. Gradually add hot milk mixture to batter, and beat until just combined.

Pour into a greased 13 x 9 x 2-inch baking dish, and bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out clean.

Allow to cool, and then top with your favorite frosting.
