Crunchy Banana Bites


12 Servings

  • 1 cup Fiber One original bran cereal
  • ½ cup reduced fat (2%) milk
  • 3 medium over-ripe bananas
  • 9 packets Splenda sweetener
  • 1 cup raisins
  • ¼ cup olive oil
  • 1 egg
  • 1¼ cups self-rising flour

Preheat oven to 425° F.

In large mixing bowl place cereal and milk. Mix in bananas and let stand 5 minutes. After 5 minutes add sweetener, raisins and mixture of olive oil and egg. Add flour and mix to even consistency.

Bake in paper-lined mini-muffin tins for 10 to 12 minutes, or until tops are lightly brown.

Makes 12 servings of 2 muffins each.
